Caramelized Apple & Ham Tart

Ingredients

  • 2 Kanzi® apples

  • 8 oz frozen shortcrust pastry case

  • 1 Tbsp olive oil

  • 1 small red onion, finely chopped

  • 9 oz ham, cut into 1/4” pieces

  • 2 Tbsp thyme, finely chopped

  • 3 eggs

  • 1/4 cup heavy cream

  • baby spinach, for serving

  • thyme sprigs, for garnish

Directions

  • Preheat oven to 350º F. Place the pastry case on a baking tray (don’t remove from the foil case). Bake for 10 minutes.

  • Meanwhile, heat oil in a frying pan over medium heat. Cut 1 1/2 Kanzi® apples into 1/4” pieces and thinly slice the remaining apple. Cook chopped apple and onion, stirring, for 10 minutes. Add ham and cook for 10 minutes, or until golden. Stir in chopped thyme. Season to taste. Spoon into pastry case.

  • Whisk eggs and cream. Pour over the ham mixture in the pastry case. Bake for 35 minutes, or until the filling is set and pastry is golden.

  • Set the tart aside for 15 minutes to cool slightly. Transfer to a serving plate.

  • Serve with sliced apple, thyme sprigs, and spinach.
